Berry Buttermilk Cold Soup

Ingredients for 4 servings:

  • 1 liter buttermilk, well chilled
  • 2 packets of vanilla sugar
  • 2 lemon(s), the juice
  • 5 tbsp sugar
  • 600 g mixed berries (e.g. raspberries, blackberries, strawberries, currants)
  • 2 slices of bread (brown bread)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Whisk together buttermilk, vanilla sugar, lemon juice, and 4 tablespoons of sugar until the sugar has dissolved. Sort and wash the raspberries and blackberries. Wash the currants and remove the stalks. Wash, hull, and halve the strawberries. Crumble the black bread and mix with 1 tablespoon of sugar. Pour the buttermilk into 4 deep plates. Add the berries and finally sprinkle with breadcrumbs.
