Ingredients for 3 servings:
- 6 eggs
- 125 g sucuk
- 3 tbsp milk
- 3 tbsp cheese, grated, e.g. Gouda Pikantje
- some curry powder or turmeric
- salt and pepper
- some onion granules
- 1 tbsp butter

an omelet with cheese and Turkish spicy garlic sausage
Pierce the sausage all over, boil in salted water until tender, remove, peel, and cut into thin slices. Whisk the eggs with the milk and spices, adding salt sparingly because the cheese and sausage are already salty. Melt the butter in a pan. Pour in the egg mixture and let it set slightly. Spread the cheese evenly over the omelet and place the sausage slices on top. Let the omelet set over low heat for a few more minutes. Then cover the pan to allow it to rise and cook through. Serve with rösti (fried potatoes) or a rice or bulgur salad, as well as pickled vegetables such as gherkins, tomatoes and peppers, Puszta salad, or mixed pickles. The spicy sausage, with its garlic, paprika, and cumin flavor, makes this omelet spicy and aromatic. It tastes great fresh and hot as a main course, but also cold and cut into small pieces as party food, or with buttered bread for dinner.
