Peel the sucuk and slice it. Crack the eggs into a bowl or cup and beat lightly. Just very lightly, don’t whisk like scrambled eggs. Add a little fat (oil or butter; the sucuk will release more fat) to a pan and fry the sliced ​​sucuk on one side. Then turn the slices over and immediately add the egg mixture. Let the whole thing set on a very low heat. Do not stir again! Be careful with the seasoning; the sucuk imparts plenty of flavor and spice. I personally don’t add any additional spices. Fresh flatbread and fresh tomatoes go well with it. It’s also delicious on toast. It’s also easy to vary, for example, you can fry bell peppers, fresh chili peppers, or chili. Parsley or chives also work.
