Ingredients for 12 servings:
- 3 eggs
- 200 g flour
- 100 ml milk
- 100 ml oil
- 1 tbsp baking powder
- salt and pepper
- ½ tsp herbs de Provence
- nutmeg
- 100 g lean bacon, cut into strips
- 100 g onion(s), diced
- 1 tsp butter
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Sauté the diced onions in butter. Combine the egg, oil, and milk with herbs, nutmeg, salt, and pepper. Add the flour and baking powder and stir vigorously. Add the sautéed diced onions and bacon strips and fold in. Divide the batter into muffin cups. Bake for 20 minutes at 180 degrees Celsius (350 degrees Fahrenheit).
