Onion cake with puff pastry

Ingredients for 4 servings:

  • 4 eggs
  • 4 large onions
  • 1 package of puff pastry, approx. 8 slices
  • 250 g cheese (Gouda), in one piece
  • 300 g bacon
  • 2 cups sour cream
  • 200 g breadcrumbs
  • ½ bunch parsley
  • Paprika powder
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 30 minutes

Cut the bacon and Gouda cheese into cubes, and the onions into rings. Sauté the bacon and onions until translucent. Mix the cream, eggs, and Gouda cheese. Add the paprika, parsley, salt, and pepper, and mix with the bacon and onions. Grease a 26 cm springform pan and sprinkle with breadcrumbs so that the bottom and sides of the pan are covered, but none of the crumbs fall out when turned over. Spread the puff pastry evenly in the springform pan, right up to the edges, and pierce evenly with a fork in 5-6 places. Then add the onion mixture. Finally, sprinkle with breadcrumbs. Bake in a preheated oven at 200 degrees Celsius for one hour. This recipe is my father’s. We often had onion cake on New Year’s Eve. I have no idea where he got it, but it’s amazing.
