Onion confit with Stilton and Black Forest ham

Ingredients for 1 servings:

  • 3 tbsp butter
  • 2 m.-large onion(s), finely chopped
  • 3 tbsp sugar, brown
  • 5 tbsp vinegar (raspberry)
  • 5 slice(s) ham (Black Forest)
  • 50 g blue cheese (Stilton)
  • Salt
  • black pepper, freshly ground

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Makes about 10 amuse-bouches on the spoon.

Melt the butter in a pan and sauté the onions over medium heat for about 5 minutes. Add the sugar and let the onions caramelize slightly. Add the vinegar and simmer gently. Season with salt and pepper. Spoon the onion confit onto appetizer spoons or Chinese soup spoons. Top with the crumbled Stilton and top each with half a slice of ham. Can be served hot or cold. Tip: The raspberry vinegar can be replaced with fruit juice, such as pineapple or orange juice, or with red wine.
