Onion – potato – pasta stew with bacon

Ingredients for 4 servings:

  • 250 g bacon
  • 2 tbsp oil (sunflower oil)
  • 500 g onion(s)
  • 500 g potatoes
  • 250 g pasta (spaghetti)
  • 1 ½ liters vegetable broth
  • curry powder
  • pepper
  • Vegetable broth, instant

Finely dice the bacon and fry in a large pot with 2 tablespoons of sunflower oil. Peel the onions, roughly dice them, and fry them with the onions. Peel and wash the potatoes, then dice them (about the size for a vegetable stew). Add them to the pot and fry briefly. Season generously with curry powder and a little more pepper. Pour in the vegetable stock and simmer for about 10-15 minutes. When the potatoes are almost—but not quite—cooked, add the spaghetti. Then simmer for about another 10 minutes. By the time the pasta is done, it will have absorbed almost all of the water. Stir often to prevent the potatoes from sticking to the bottom of the pot or burning. Add a little more water if necessary. Finally, season again with curry powder, pepper, and vegetable stock.
