Onion Rings
Mix eggs, milk and beer in a bowl. In two bowls, mix 250g flour and 1 teaspoon of baking powder each. Add 7.5cm of oil to a heavy saucepan and heat over medium heat until very hot (190-200°C). Dip the onion rings in the egg mixture and toss in the first bowl of flour. Then dip them again in the egg mixture and toss in the second bowl of flour. Carefully add the onion rings, one at a time, to the hot oil. Fry the rings for about 3 minutes until golden brown, turning once. Using a slotted spoon, place the onions on kitchen paper to drain. Sprinkle with coarse salt and serve immediately.
