Ingredients for 4 servings:
- 300 g onion(s)
- 1 garlic clove(s)
- 2 tbsp butter
- 250 ml wine, white, dry
- 3 tbsp crème fraîche
- 2 egg yolks
- 1 bunch basil, chopped
- pepper
- 4 slices of baguette
- Salt
- 1 liter broth (instant)
- Nutmeg, grated
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Peel the onions and garlic. Halve the onions and slice them crosswise into thin strips. Crush the garlic. Sauté both in a saucepan in hot butter. Pour in the broth and wine, and simmer for 15 minutes. Meanwhile, preheat the oven to 250 degrees Celsius (480 degrees Fahrenheit). Mix the crème fraîche and egg yolks. Stir in the chopped basil and season with pepper. Spread the crème fraîche on the bread slices and bake in the oven for 5 minutes. Season the soup with salt, pepper, and nutmeg. Serve with baguette. Garnish with basil, if desired.
