Onion soup with ginger

Ingredients for 4 servings:

  • 5 large onions
  • 1 tbsp oil
  • 1 tsp black pepper
  • 1 pinch of ginger powder
  • 1 ½ liters chicken broth, preferably homemade

Instructions

Peel the onions, halve them, and slice them into half rings. Heat the oil in a pan and sauté the onions for 2 minutes. Add the pepper and ginger and fry. Then add the broth, little by little; first, add a ladleful of liquid and let it reduce. Then add all the liquid and simmer thoroughly. Season with salt, if desired. The onion and ginger have antibacterial properties. It’s also delicious if you ladle the soup into ovenproof bowls, place a slice of toasted bread on top of each, and sprinkle the bread with cheese. Then bake in the oven at 180°C for 5-8 minutes.
