Onions in mashed potatoes

Ingredients for 2 servings:

  • 500 g potatoes, peeled
  • 2 onions, peeled, approx. 140 g
  • 100 ml milk
  • 60 g butter
  • 1 tsp rapeseed oil
  • Salt and pepper, white
  • Nutmeg, freshly grated

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Dice the potatoes and place them in a saucepan with a little salt. Add enough cold water to cover the potatoes. Cover the pan and bring to a boil, then cook the potatoes for about 20 minutes. Dice the onions. Heat the butter and rapeseed oil in a pan, add the diced onions, and fry until golden brown. Season with salt and pepper. Remove the pan and potatoes from the heat and drain the water. Return the pan to the heat and let the potatoes cool briefly. Then mash them with a little milk and a potato masher. Stir in the cooking fat and diced onions, then add enough milk to make a mashed potato. Add a little more milk if necessary. Season to taste with salt, pepper, and nutmeg.
