LCHF-compliant, protein utilization
When cooking LCHF-compliant, it’s very common for recipes to only call for the egg yolk. Since I don’t want to throw away the egg white, I keep it in the fridge and use it in this great recipe, among others. Dice the onion and avocado. Don’t cut the avocado pieces too finely. Sauté the diced onion in olive oil until golden brown. Meanwhile, add the cream, salt, and pepper to the egg white and whisk. Add everything to the pan, cook briefly like an omelet, then stir to form scrambled eggs. Remove the pan from the heat and add the avocado. Finally, garnish with herbs to taste.
