Ingredients for 1 servings:
- 2 eggs
- 180 g flour
- 100 g cream cheese (yogurt cream cheese)
- 150 g yogurt
- ½ apple
- 1 tbsp marmalade (orange)
- 110 g powdered sugar
- 2 tsp baking powder
- 1 tsp, heaped cinnamon
- 150 ml lemonade (Sprite)
- some margarine for the mold

Preheat the oven to 180 degrees Celsius (convection oven). Grease the muffin tin with margarine. Sift the flour and powdered sugar into a large mixing bowl. Peel half the apple, cut it into fine cubes, and add it to the bowl along with the remaining ingredients. Mix everything until thick and fluffy, adding a little more Sprite if desired for a fluffier batter. Spoon the batter evenly into the tins, making sure to leave enough room for it to rise. Bake in the preheated oven on the middle rack for about 20 minutes. This batch makes 12 muffins. The muffins are perfect to take on the go, can be varied with any toppings, and are also a hit with children. Combine them with ice cream, yogurt, etc. for a great dessert. It’s also a relatively light treat because no butter is used.
