Vegetable soup rich style

Ingredients for 4 servings:

  • 400 g carrot(s)
  • 300 g leek
  • 150 g onion(s)
  • 1 bell pepper(s), red
  • 500 ml meat broth
  • 1 garlic clove(s)
  • salt and pepper
  • 2 tbsp flour
  • 2 tbsp butter, soft
  • 250 ml milk
  • 4 tbsp parsley, chopped

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Clean and wash the vegetables and cut into thin slices or strips. Peel the garlic. Bring the meat broth with the garlic to a boil, season with salt and pepper. Add the carrots and onions and simmer gently for 5 minutes. Add the leek and bell pepper and bring to a boil. Knead the flour with the butter, add it, and stir. Cook the soup for 10 minutes over medium heat. Remove the garlic, add the milk and parsley, and heat through. Finally, season the soup to taste.
