Orange batter

Ingredients for 8 servings:

  • 200 g butter, soft
  • 160 g sugar
  • 2 pinches of salt
  • 4 eggs, size M
  • 3 tbsp orange peel, freshly grated
  • 100 ml orange juice, freshly squeezed
  • 300 g flour
  • 2 tsp baking powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

The dough is a true all-round genius, very good for muffins or themed baking trays (e.g. Easter bunnies etc.)

Preheat oven to 175°C (350°F). Cream butter, sugar, and salt until very light and fluffy. Add eggs one at a time, beating thoroughly each time. Add orange zest and juice. Mix flour with baking powder, sift into the batter, and stir briefly. Pour the batter into any well-greased baking pan. This batter is particularly suitable for muffin or mini-shaped baking trays. I made five small Easter shapes from half the batter in an Easter-themed tray from a discount store. Bake in the oven at 160°C (center fan setting) for about 20-30 minutes. (Do the toothpick test). Remove from the pan and let cool on a wire rack. You can now use any icing you like: icing sugar mixed with orange juice (40 g icing sugar and 4 tbsp orange juice), white chocolate icing (melt in a water bath beforehand), icing sugar, etc. The orange juice can easily be replaced with lemon or lime juice and zest.
