Ingredients for 1 servings:

  • 125 g butter
  • 125 g brown sugar
  • 1 egg(s)
  • 1 lemon(s), untreated, zest
  • 200 g flour
  • 1 tsp baking powder
  • 30 g candied orange peel, finely chopped
  • 25 g almonds, chopped
  • 2 tbsp orange juice
  • 100 g powdered sugar
  • 20 g candied orange peel

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Quick to make, delicious cookies, not just for Christmas

Beat butter, sugar, and egg until fluffy. Add lemon zest, a pinch of salt, flour, baking powder, candied orange peel, and almonds, and knead into a shortcrust pastry. Form several logs approximately 3 cm in diameter and chill for 1 hour. Then cut into approximately 1/2 cm thick slices. Place on a baking sheet lined with baking paper and bake at 200°C for 15 minutes. Let cool. Mix orange juice with powdered sugar and spread over the cookies, then sprinkle with candied orange peel. If you like, you can also coat half of the cookies with chocolate coating. Makes approximately 45 cookies.
