Pudding – Oatmeal Cookies

Ingredients for 1 servings:

  • 225 g butter, soft
  • 150 g brown sugar
  • 50 g sugar
  • 2 g egg(s)
  • 95 g pudding powder (vanilla flavor), instant
  • 140 g flour
  • 1 tsp baking soda
  • possibly cinnamon
  • 280 g oat flakes (melted flakes)
  • 200 g raisins

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit). Cream the butter until light and fluffy, then gradually add both sugars and mix thoroughly. Beat in the eggs one at a time, beating well after each addition. Add the pudding mix and cinnamon, if desired, and mix thoroughly. Combine the flour and baking soda and slowly add to the butter mixture while stirring. Stir in the instant flakes and raisins. Drop teaspoonfuls, about 5 cm apart, onto ungreased baking sheets and bake for about 10 minutes. Transfer to a wire rack to cool. Makes about 66 pieces. Shelf life: about 5 days.
