Ingredients for 1 servings:

  • 2 orange(s), untreated
  • 2 egg yolks
  • 50 g almonds, peeled and finely ground
  • 100 g sugar
  • 100 g flour
  • 50 g butter
  • 1 tsp baking powder
  • 1 tsp cardamom, finely ground
  • 50 g chocolate coating

Instructions

First, blanch the almonds in boiling water, let them stand for a while, and then peel off the skins. Now grind the almonds finely in a mill. Grate the zest from the oranges. Squeeze 50 ml of juice from the orange. Now mix together 1 teaspoon of orange zest, the orange juice, the egg yolk, and the sugar. Add the softened butter and beat everything with a whisk until smooth. Mix the flour with the baking powder. Add the ground almonds and cardamom and mix. Now add this mixture to the butter and egg mixture and mix. Fill the batter into a piping bag and pipe cookies onto a baking sheet lined with baking paper (the batter will make about 2 baking sheets). Leave plenty of space between the cookies, as they spread quite a bit. Bake the cookies in a preheated oven on the second rack from the bottom at 200°C (180°C fan/gas mark 3) for about 8 minutes until golden brown. Cool the cookies on a wire rack. Melt the chocolate coating in a bain-marie, fill a piping bag, and decorate the cookies. If desired, sprinkle with the remaining orange zest. Once the chocolate coating has set, place the cookies between layers of parchment paper in a tin. Store in a cool, dry place for about 3-4 weeks.
