Orange marzipan sticks

Ingredients for 1 servings:

  • 200 g butter, soft
  • 200 g marzipan paste
  • 80 g powdered sugar
  • 2 tbsp vanilla sugar, bourbon
  • 1 m.-sized egg(s)
  • 1 tsp, heaped flavoring, (Finesse Orange) OR:
  • some orange peel, grated
  • 3 drops of bitter almond flavor
  • 200 g spelt flour, type 630
  • 100 g starch flour
  • 1 tsp cream of tartar baking powder
  • Cake icing, (chocolate icing) dark, for decoration

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 52 minutes

Gently heat the marzipan mixture in the microwave at 300 watts for 20 seconds. Cream the softened butter with the powdered sugar, vanilla sugar, and egg in a food processor until fluffy. Add the warmed, softened marzipan, orange zest, and bitter almond oil and beat until creamy. Combine the flour with the cornstarch and baking powder, then sift and fold into the foam mixture with a whisk. Mix everything until a smooth dough forms. Preheat the oven to 170°C (fan-assisted). Fill a piping bag with a star nozzle or a cookie press with the dough and pipe approximately 5 cm long logs onto a baking sheet lined with non-stick baking paper (makes approximately 3 sheets). Keep enough space between the cookies, as they will expand slightly during baking. Bake for approximately 10-12 minutes until light brown (baking time may vary slightly depending on the oven). It’s perfectly normal for the cookies to be a little soft at first, but once they cool, they’ll harden and become nice and crumbly. To decorate, dip the ends of each cookie in dark chocolate icing and let them dry on a baking sheet. These cookies are delicious all year round, not just at Christmas.
