Orange – pineapple – kiwi salad with yogurt dip

Ingredients for 4 servings:

  • 8 ring/s pineapple, fresh or from the can
  • 4 oranges
  • 3 kiwis
  • 4 tsp pistachios, chopped
  • 3 tbsp honey
  • 2 tbsp lemon juice, fresh
  • 300 g yogurt (skimmed milk)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the oranges, remove the white pith, and slice or fillet them. Peel the kiwis and cut them into wedges. Peel the pineapple, cut into rings, and remove the hard core or drain the rings. Mix the lemon juice with the honey. Arrange the pineapple rings and kiwi on a plate, pour the lemon and honey marinade over them, top with yogurt, and sprinkle with the chopped pistachios. Serve.
