Ingredients for 1 servings:

  • 600 ml orange juice (organic)
  • 400 g pumpkin flesh (Hokkaido, cleaned and weighed)
  • 500 g gelling sugar (2:1)
  • 2 tsp, leveled gingerbread spice

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 20 minutes

Christmassy

Finely grate the pumpkin flesh. Place it in a large pot along with the orange juice, gelling sugar, and gingerbread spice and mix well. Let it steep for about 2-3 hours. Bring to a boil and simmer for about 3 minutes. Once the gelling test is successful, pour the mixture into prepared jars while still hot. Seal the jars immediately and, if desired, turn them upside down for about 5 minutes.
