Orange-vanilla vinaigrette

Ingredients for 4 servings:

  • 250 ml orange juice, freshly squeezed
  • 1 vanilla pod(s), including the pulp
  • 1 lime(s), untreated
  • 60 ml olive oil
  • salt and pepper
  • 1 pinch(s) of sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with lamb’s lettuce and other green salads

Halve the vanilla pod lengthwise and scrape out the seeds. Reserve the pods! Grate the zest from half the lime. Then squeeze the lime. Boil down the orange juice with the vanilla seeds and the scraped pod halves, as well as the zest and juice of half a lime, and chill. Remove the vanilla pod. Be sure to let this reduced juice cool completely! Slowly pour the olive oil into the cold orange juice in a thin stream, stirring constantly with an immersion blender. Season to taste with the juice of the other lime half, salt, pepper, and a pinch of sugar. Marinate the salad with the finished vinaigrette. Tip: This vinaigrette tastes excellent with lamb’s lettuce, but also with other green salads.
