Instructions
Working time approx. 1 hour; Rest time approx. 2 hours; Cooking/baking time approx. 45 minutes; Total time approx. 3 hours 45 minutes
The quantities are based on a 20 cm diameter and 10 cm high baking pan. For the base, melt the butter and set aside. Beat the eggs and sugar for 5-10 minutes until light and fluffy, until the sugar has dissolved. Sift the flour, cocoa powder, and baking powder together and mix into the egg mixture, alternating with the milk and melted butter. Finely chop the biscuits and mix into the mixture. If you don’t have a 10 cm deep baking pan, you should bake two bases. Grease and flour the baking pan. Pour in the batter and bake for 45-50 minutes at 175 degrees. Do the skewer test. Let the cake cool, then cut horizontally into 4 slices to make 4 layers. Set 2 layers aside and trim off about 2 cm off the edges of 2 layers to create a smaller diameter. For the filling, prepare the gelatine according to the package instructions. Mix together the cream cheese, mascarpone, powdered sugar, and the chopped biscuits. Heat the gelatin until dissolved. Gradually stir in the cheese cream. Place a large layer on a non-slip cake stand. Place a cake ring in the center, leaving a 2 cm border. Spread a layer of cream. Place a small layer on top and spread with cream. If you like, you can place biscuits in the cream. Place the second small layer on top and spread with cream. Refrigerate for at least 1 hour. Beat the room-temperature butter with the powdered sugar until fluffy. Stir in the mascarpone. Once chilled, spread the buttercream on the cake in two layers, then refrigerate in between to chill. Roll out the fondant and cut out shapes as desired, then decorate the cake with them.
