Oriental beef goulash with coconut milk and peanuts

Ingredients for 4 servings:

  • 1 kg beef goulash
  • 300 g onion(s)
  • 3 tbsp harissa
  • 1 chili pepper(s), fresh
  • 400 ml coconut milk
  • 200 ml water
  • 1 handful of roasted peanuts or 1 tsp peanut butter
  • 2 tsp coconut oil
  • 1 lemon(s)
  • salt and pepper
  • 1 pinch(s) of coconut blossom sugar, optional

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours

Peel and dice the onions, and fry them in a pan with a little coconut oil. Remove the diced beef from the pan and set aside. Gradually brown the beef. After browning, add the meat, onions, chili, and harissa to a pot, deglaze with water, and add the coconut milk. Season with salt and pepper and simmer for about 60-90 minutes. Add a little coconut blossom sugar, if desired. Serve the finished dish on a plate with a squeeze of lemon juice and the peanuts. Tip: Potatoes, rice, or dumplings go well with the goulash.
