Ingredients for 4 servings:

  • 500 g pork fillet(s)
  • 1 can sliced ​​mushrooms
  • 5 apricots, fresh
  • 1 onion(s)
  • ½ cup sour cream (30%)
  • 1 tsp apricot jam
  • 1 tsp curry powder (homemade)
  • Broth, granulated
  • possibly chili powder
  • sesame oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Finely chop the onion. Clean the fillet and cut into strips, pit and dice the apricots. Heat the sesame oil and sauté the onions until translucent. Add the curry and fry. Add the fillet strips and fry until cooked through. Fry the diced apricots and drained mushrooms. Pour in a little water and granulated stock. Stir in the sour cream and apricot jam and let everything simmer for a while. Depending on your preference, you can also add chili. Basmati or jasmine rice is delicious with this. I only use homemade curry, consisting of cinnamon stick, coriander, cumin, black pepper, chili pepper, curry leaf, cloves, nutmeg, cardamom, mace, mustard seeds, fenugreek seeds, turmeric, long pepper, etc.
