Ingredients for 4 servings:

  • 450 g flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 2 tsp salt
  • 4 eggs
  • 160 ml olive oil
  • 250 ml buttermilk
  • ½ bell pepper(s), red
  • 125 g bacon
  • 125 g cheese, grated
  • 1 tbsp herbs (8-herb blend)
  • 1 tsp ground ginger
  • 1 tsp coriander powder
  • 1 tsp cumin, ground
  • 1 tsp anise powder
  • 1 tsp curry powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Chop the bell peppers into small pieces and fry the bacon. Combine all the dry ingredients in a bowl. Then combine the eggs, oil, and buttermilk and stir into the dry mixture with a spoon until blended. Then fold in the bell peppers, cooked bacon, and grated cheese. I always place two paper baking cups in each baking pan. Fill the cups with the mixture (a little more than two-thirds full) and bake at 170 degrees Celsius (350 degrees Fahrenheit) for about 20-25 minutes. This mixture makes enough for 12-14 muffins.
