Oriental vermicelli rice

Ingredients for 4 servings:

  • 1 cup(s) rice, parboiled
  • 1 cup(s) noodles (thin vermicelli)
  • 2 tbsp olive oil
  • 1 pinch of salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Fill a wide pot (with a tight-fitting lid) with olive oil (it should cover the bottom), add the vermicelli, and heat over medium-high heat. Stir and brown the noodles until they’re almost cocoa brown. Be careful, this will happen very quickly! Remove the pot from the heat and add the rice and salt. Sweat the whole thing for another 2 minutes. Then add enough cold water to come up to about 2cm above the rice. Bring to a boil once and reduce the heat to 1. Put the lid on tightly and—well, best to do something else—it basically cooks itself. Simmer until all the water has evaporated. Don’t drain!
