Plum whiskey jam

Ingredients for 5 servings:

  • 1,000 g plum(s) (prepared and weighed)
  • 500 g gelling sugar (2:1)
  • ¼ tsp cinnamon, ground
  • 1 shot of whiskey

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Puree the washed, halved, and pitted plums in a blender or chop them very finely. Pour the plum puree into a large saucepan, drizzle in the preserving sugar, and bring to a boil, stirring constantly. Let the plum puree simmer for 4 minutes. Remove the pan from the heat, then stir in the cinnamon and whiskey. Skim the jam with a slotted spoon and pour into jars while still hot. Seal tightly immediately.
