Ostfriesen Cake

- 6 Pc. Eggs
- 200 g Sugar
- 1 packet Vanilla sugar
- 2 tbsp Water hot
- 100 g Flour
- 100 g Strength
- 1 packet Baking powder
- 500 g Raisins
- 1400 ml Cream
- 6 packet Cream stabilizer
- To prepare, soak the raisins in East Frisian brandy for at least two weeks.
- Preheat the oven to 180 ° C for baking.
- Grease and flour the spring form (Ø 26). Combine eggs, sugar, vanilla sugar and water and beat for 15-20 minutes. Mix the flour, starch and baking powder and sift into the mixture. Carefully fold in with a whisk. Pour into the springform pan and bake for 25-30 minutes. Let the sponge cake cool and cut twice so that you have three bases.
- Put the raisins in a colander, wash and drain. Beat the cream firmly with the cream stabilizer. Spread some of it on the lower floor. Divide the rest, mix one half with the raisins and distribute on the second base. Then layer the individual floors on top of one another.
- Spread the rest of the cream around the cake and decorate. If you like, you can put a few raisins on top for decoration. The cake should be kept in the refrigerator for at least an hour before consumption.
