Ovaltine muffins

Ingredients for 1 servings:

  • 250 g butter or margarine, soft
  • 150 g sugar
  • 1 pinch of salt
  • 4 eggs
  • 250 g almonds, ground
  • 250 g drink powder (Ovomaltine)
  • 1 tbsp cocoa powder
  • 1 ½ dl milk
  • 200 g flour
  • 1 tsp baking powder
  • 150 g chocolate, dark, chopped

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Preheat oven to 180°C (top/bottom heat). Prepare 24 muffin tins (ideally nest two paper sleeves per muffin). Place margarine or butter in a bowl and whisk until peaks form. Add sugar, salt, and eggs; continue whisking until the mixture is light in color. Add almonds, Ovaltine, cocoa powder, and milk; mix. Combine flour and baking powder and stir into the batter. Stir in the chocolate chips at the end. Pour the batter evenly into the muffin tins and bake for 20 minutes.
