Ingredients for 4 servings:
- 4 chicken breast fillets
- some cheese, grated
- 1 small jar pesto, green
- 8 slice(s) bacon, smoked, thinly sliced
- some salt
- some pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes
Filled with green pesto and cheese
Preheat oven to 180 degrees Celsius or grill. Wash the chicken fillets and pat dry with a kitchen towel. Gently pound the fillets on both sides with a meat tenderizer, then season with salt and pepper. Place approximately 1.5 teaspoons of green pesto in the center of each fillet and spread it lightly with a spoon. Sprinkle with a little grated cheese and carefully roll up. Wrap each fillet roll with two strips of bacon. Place the rolls in a baking dish and roast for approximately 1 hour, until the bacon is crispy and the fillet rolls are cooked through.
