Low-carb cheese and ham rolls

Ingredients for 4 servings:

  • 4 large eggs
  • 30 g ground almonds
  • 150 g cheese, grated
  • 2 tbsp cream cheese (herbs or paprika)
  • 50 g Parmesan
  • 40 g mayonnaise
  • 8 slices of cooked ham
  • 4 slices of cheddar cheese
  • 4 slices of Gouda

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

For the dough, whisk the eggs, then mix with the almonds, grated cheese, cream cheese, and Parmesan. The mixture will be relatively runny, which is normal. Pour the mixture onto a baking sheet lined with baking paper and bake in the oven at 200°C for 5-10 minutes. The dough should then have reached a firm consistency. Remove from the oven and let cool. Once cooled, cut into four rectangles, spread each rectangle with mayonnaise, and place two slices of ham, a slice of Gouda, and a slice of Cheddar on top. Roll up and return to the oven for another 10-15 minutes, until the rolls are nicely browned and the cheese has melted.
