Oven-baked chicken with herbs

Ingredients for 4 servings:

  • 2 chickens
  • Salt
  • pepper
  • Rosemary, Thyme
  • 2 tbsp olive oil
  • 1 kg tomatoes (vine tomatoes), peeled, quartered
  • 1 bunch spring onion(s), sliced
  • 3 garlic cloves, sliced
  • 500 g mushrooms, small
  • 2 tbsp balsamic vinegar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

as a starter or with rice or noodles as a main course

Season the chicken with salt and pepper and rub generously with rosemary and thyme. Brown in a hot roasting pan with oil until golden brown, then remove from the pan. Sauté the vegetables for about 5 minutes. Place the chicken on top of the vegetables and cook in the covered roasting pan at 225°C for about 60 minutes. Brush generously with Acetico 10 minutes before the end of the cooking time.
