Oven-baked salmon trout

Ingredients for 2 servings:

  • 2 trout(s) (salmon trout)
  • 2 tbsp butter (heaped tbsp), room temperature
  • 1 clove(s) garlic, crushed
  • 2 tbsp mixed herbs (e.g. 8-herb, frozen)
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 200°C (top/bottom heat). Wash the trout thoroughly, inside and out, and pat dry. Make 4-5 diagonal cuts on one side of the trout with a knife and place on long pieces of aluminum foil. Mix the butter with the herbs, garlic, salt, and pepper. Fill or rub the side cuts and the belly with the butter mixture. Wrap the trout tightly in aluminum foil and cook in a hot oven for about 30-40 minutes. Boiled potatoes go well with the trout. Tip: Personally, a piece of baguette is enough for me; it makes a wonderful dip in the butter sauce.
