Oven pancakes from Finland

Ingredients for 1 servings:

  • 600 ml milk (preferably 1.5% fat)
  • 250 g flour
  • 2 eggs
  • some salt
  • 1 tbsp butter, soft
  • 1 tbsp sugar
  • Grease for the tray

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Mix all ingredients into a smooth batter and pour onto a well-greased baking sheet (make sure the sides are at least 2.5 cm high). Place the baking sheet in an oven preheated to 200-220°C (top/bottom heat). The pancakes are ready after 25-30 minutes. Remove the baking sheet and cut the pancakes into pieces of any size. The pancakes aren’t very sweet on their own. Traditionally, they’re served with strawberry jam. But they taste best with vanilla ice cream and cloudberry jam.
