Ingredients for 2 servings:
- 500 g oyster mushrooms
- 1 bunch of spring onions
- 100 g breakfast bacon
- 2 tbsp butter
- 1 garlic clove(s)
- 300 g cream
- 2 tbsp crème fraîche
- Salt
- pepper
- 2 tbsp parsley, chopped
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
Rub the oyster mushrooms with a cloth. Trim and wash the spring onions, then cut both into bite-sized pieces. Dice the bacon and fry in the butter until crispy. Now add the oyster mushrooms and onions and sauté over medium heat until the liquid has evaporated. Peel the garlic, finely dice it, and add it to the mushrooms. Pour in the cream and simmer for 6-8 minutes. Toss the mushrooms with the crème fraîche, season with salt and pepper, and sprinkle with the chopped parsley.
