Pak Choi salad with apple in peanut butter dressing

Ingredients for 4 servings:

  • 1 pak choi, very finely chopped
  • 1 large apple, coarsely grated
  • 1 large carrot(s), coarsely grated
  • 75 g onion(s), red, diced
  • 120 ml almond milk (almond drink)
  • 65 g creamy peanut butter
  • 60 ml balsamic vinegar
  • 40 g raisins
  • 1 tsp Dijon mustard
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Combine the bok choy, apple, carrot, and onion in a large salad bowl. Blend the almond milk, peanut butter, vinegar, raisins, and mustard in a blender until smooth. Mix as much as you like with the salad ingredients, then season to taste with salt and pepper. Serve the remaining dressing separately.
