Ingredients for 4 servings:
- 1 pak choi, very finely chopped
- 1 large apple, coarsely grated
- 1 large carrot(s), coarsely grated
- 75 g onion(s), red, diced
- 120 ml almond milk (almond drink)
- 65 g creamy peanut butter
- 60 ml balsamic vinegar
- 40 g raisins
- 1 tsp Dijon mustard
- salt and pepper
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Combine the bok choy, apple, carrot, and onion in a large salad bowl. Blend the almond milk, peanut butter, vinegar, raisins, and mustard in a blender until smooth. Mix as much as you like with the salad ingredients, then season to taste with salt and pepper. Serve the remaining dressing separately.
