Ingredients for 2 servings:
- 100 g coconut flakes
- 3 egg whites
- 2 tbsp maple syrup or honey
- ½ banana(s), mashed
- 1 pinch(s) salt
Instructions
Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour
Whisk the egg whites in a bowl until stiff peaks form, then chill in the refrigerator for 30 minutes. Preheat the oven to 180°C. Gently fold in the coconut flakes, mashed banana, maple syrup or honey, and salt. Drop tablespoon-sized dollops onto a baking sheet lined with parchment paper. The mixture yields approximately 12-15 large macarons. Place the macarons in the oven and bake for 12-15 minutes, until light golden. If desired, add a sprinkle of cinnamon.
