Pan-fried sweet potatoes

Ingredients for 1 servings:

  • 320 g sweet potato(s), approx. 1 potato
  • 1 shallot(s)
  • ½ vegetable onion(s)
  • 1 pepper (Caribbean red), red
  • 10 g parsley
  • 10 g rapeseed oil
  • 20 g butter

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

With Caribbean red

Peel and dice the onion and shallot. Heat the butter in a pan over medium heat. Add the onions and sauté. Clean, deseed, and finely chop the bell peppers, and add them to the onions. When the onions and bell peppers are translucent, transfer them to a plate and set aside. Peel the sweet potato and cut it into slices, then cubes. Heat the oil in the pan over the same heat and fry the potatoes well on all sides. Finely chop the parsley and mix it into the potatoes along with the onions and bell peppers just before the end of the cooking time. Season to taste; I liked it just as it was. Serve the fried potatoes on a plate and enjoy. I had a meatball and tomato with it. The calorie count only applies to the fried potatoes.
