Pan-stir Beef Strips with Paprika and Hearty Mashed Potatoes

Ingredients
 

Stir-fried beef strips with paprika:

  • 250 g Hip steak
  • 1 Egg
  • 1 tbsp Dark soy sauce
  • 1 tsp Tapioca starch
  • 2 tbsp Sunflower oil
  • 150 g 1 Red pepper
  • 50 g Spring onions
  • 2 piece Garlic cloves
  • 1 piece Ginger the size of a walnut
  • 1 Green chilli pepper
  • 1 tbsp Sweet soy sauce
  • 1 tbsp Dark soy sauce
  • 2 tbsp Sherry
  • 1 tsp Sambal oeklek
  • 4 big pinches Colorful pepper from the mill
  • 1 big pinch Sugar

Hearty mashed potatoes:

  • 500 g Potatoes
  • 100 g 1 Onion
  • 1 tsp Salt
  • 1 tsp Ground turmeric
  • 2 tbsp Cooking cream
  • 1 tbsp Butter
  • 3 big pinches Coarse sea salt from the mill
  • 3 big pinches Coarse sea salt from the mill
  • 1 big pinch Ground nutmeg

Serve:

  • 2 Stalk Parsley for garnish

Instructions
 

Stir-fried beef strips with paprika:

  • Clean / strip the steak, wash, pat dry with kitchen paper and place in the freezer for about 15 minutes. Remove, first cut into slices and then into fine strips. Whisk an egg with dark soy sauce (1 tbsp) and tapioca starch (1 tsp) well and marinate the beef strips with it for about 20 minutes. In the meantime, prepare the vegetables: clean and wash the pepper and cut into fine strips. Clean and wash the spring onions, cut into pieces approx. 4 - 5 cm long and cut them into fine strips. Peel and finely dice the garlic cloves and ginger. Clean / core the chilli pepper, wash, halve lengthways and cut into fine strips. Heat sunflower oil (2 tbsp) in the wok, add the beef strips, fry vigorously / stir-fry and slide on the edge of the wok. Add the vegetables (garlic clove cubes + chilli pepper cubes + ginger cubes, paprika strips and spring onion strips) and stir-fry with Deglaze with sweet soy sauce (1 tbsp), dark soy sauce (1 tbsp) and sherry (2 tbsp). Finally, season with sambal oelek (1 teaspoon), colored pepper from the mill (4 big pinches) and sugar (1 big pinch). Let everything simmer / cook for another 6 - 8 minutes. Stir every now and then.

Hearty mashed potatoes:

  • Peel, wash and dice the potatoes. Peel and dice the onion. Boil the potato cubes with the onion cubes in salted water (1 teaspoon salt) ground with turmeric (1 teaspoon) for about 20 minutes, drain and add the cooking cream (2 tbsp), butter (1 tbsp), coarse sea salt from the mill (3 strong Pinches), colored pepper from the mill (3 big pinches) and ground nutmeg (1 big pinch) work through well with the potato pounder.

Serve:

  • Spread stir-fried beef strips with paprika on 2 plates. Add the hearty mashed potatoes and garnish with parsley, serve.
