Ingredients for 4 servings:

  • 220 g flour
  • 1 packet of vanilla sugar
  • 1 tsp baking powder
  • 1 apple, grated*
  • 3 eggs
  • 250 ml milk
  • oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Combine flour, vanilla sugar, baking powder, and the grated apple in a mixing bowl. Separate the eggs and add the egg yolks. Mix the ingredients in the bowl until a batter forms. Depending on the consistency of the batter, add milk until the batter is creamy (almost runny). Then beat the egg whites until stiff peaks form and fold into the batter. Fry the batter in batches (one ladleful per pancake) in a pan with hot oil or fat until golden brown (don’t forget to flip). *Alternatively, you can also use a splash of apple juice.
