Ingredients for 4 servings:
- 250 g flour
- 4 eggs
- ¼ liter of milk
- Salt
- Parsley
- 4 tbsp oil
- 4 tomatoes
- Olives, black
- 250g mozzarella
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Separate the eggs and beat the egg whites until stiff. Finely chop the parsley. Whisk the flour, milk, and egg yolks well and season with salt. Then add the parsley to the pancake batter and fold in the beaten egg whites. Heat 1 tablespoon of oil in a pan and pour 1/4 of the pancake batter into the pan. Top with tomato slices, sliced olives, and mozzarella. Bake the pancake pizza with the lid closed until the cheese has melted. Then bake the other pizzas. Serve with a green salad. I like to sprinkle oregano on the pizza.
