Pancake Rolls with Apple-horseradish Cream Cheese and Salmon

- 225 g Flour
- 3 Eggs
- 1 Pr Sugar
- Salt
- 0,25 liter Milk
- 1 Lemon zest and juice
- 1 Iceberg lettuce fresh
- 250 g Smoked salmon
- 200 g Cream cheese
- 2 Apple
- Horseradish at will
- Milk
- Beat the eggs with the sugar and salt until frothy. Add the milk and season with lemon zest and juice. Sifted in the flour and stir into a smooth dough. Heat 1 tablespoon of olive oil in a pan. Pour in some batter and bake until golden, turn the pancakes and finish baking over low heat. Continue baking in this way until the dough is used up.
- Wash the apple, peel and grate. Mix the cream cheese with horseradish, grated apple and some milk until smooth. Spread some cream cheese on each pancake. Cover with iceberg lettuce leaves and smoked salmon and roll up. Cut into slices and serve.
