Pancakes with apples

Ingredients for 1 servings:

  • 315 g flour
  • 70 g sugar
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 pinch(s) nutmeg, ground
  • 2 large eggs
  • 480 ml buttermilk
  • 55 g butter, melted
  • 2 tsp vanilla extract
  • 2 apples (Granny Smith)
  • Maple syrup, for serving

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Sift the flour into a bowl, add 70g sugar, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg, and mix everything with a whisk. Beat the eggs with a hand mixer until frothy, then briefly stir in the buttermilk, butter, and vanilla extract. Peel and finely grate an apple, and briefly stir in. Now I take the whisk and stir in the flour mixture until everything is well combined. Core and peel the second apple, then slice it into thin slices using a mandoline. Heat some butter in a non-stick pan and add a small ladleful of batter. I always bake two pancakes together. Let the batter set briefly and then place an apple slice in the middle of each one. When small bubbles form on the batter, the pancake is ready to flip. But first, sprinkle each apple slice with a little of the remaining 2 tablespoons of sugar and only then flip the pancake. Then finish cooking the second side until golden brown. Continue with the batter until all the batter is used up. I made 16 pancakes. Serve the pancakes warm with maple syrup.
