Pancakes with yogurt, protein powder and spelt flour

Ingredients for 1 servings:

  • 150 g natural yogurt
  • 100 ml milk
  • 3 egg whites
  • 3 egg yolks
  • 50 g protein powder
  • 100 g spelt flour
  • 1 pinch of salt
  • 1 tsp sugar, if desired
  • ½ pack of baking powder, if necessary
  • Olive oil or coconut oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Whisk the egg whites until stiff and set aside. Combine the milk, yogurt, and egg yolks in a bowl. Mix the flour, protein powder, and salt. Add baking powder if you want an extra fluffy batter. You can add sugar if desired. Flavored protein powder, however, makes it taste sweeter. Stir the egg whites into the egg yolk mixture, then gradually stir in the flour mixture. If the batter is too thick, add a little more milk to give it a nice, thick, creamy consistency. It shouldn’t be too runny! Heat the pan with about 1 teaspoon of oil over medium heat. Fry the batter one after the other until golden brown. You can top the finished pancakes with various toppings to taste: powdered sugar, fresh fruit, chocolate sauce, etc.
