  • 250 ml water, lukewarm
  • 20 ml oil
  • 5 g dry yeast
  • 0.67 tbsp sugar
  • 0.33 tbsp salt

Working time approx. 20 minutes; Rest time approx. 1 hour 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 50 minutes

makes 4 long loaves

Mix the flour, sugar, salt, and dry yeast. Add the water and oil. Knead, adding more flour if necessary, until the dough is only slightly sticky. Remove the dough from the bowl, add a few drops of oil to the bowl, and roll the dough in it until it is completely coated. Let it rise under a damp cloth for about 45 minutes. Divide the dough into 4 pieces and shape into long loaves. Let it rise for a further 30 minutes under the cloth. Preheat the oven to 200°C (fan oven). Bake the loaves on a baking tray lined with baking paper on the middle shelf for 12-15 minutes, depending on the desired browning. Then, while the loaves are still warm, brush them with milk. This keeps the crust nice and soft and makes them ideal for grilling.
