Pappardelle with bacon

Ingredients for 4 servings:

  • 500 g pappardelle
  • 6 tomatoes
  • 150 g bacon or pancetta
  • 2 chili peppers, dried
  • 100 g Parmesan
  • 15 g butter
  • 150 g cream
  • some basil, fresh

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

not exactly low in calories, but super tasty

Cook the pappardelle in plenty of salted water until al dente. Peel the tomatoes and roughly chop them, removing the seeds. Cut the pancetta or bacon into small pieces. Chop the chilies and grate the Parmesan cheese. Melt the butter. Fry the bacon and chilies until the bacon is browned. Add the tomatoes. Season with salt and pepper and simmer gently for 10 minutes. Stir in the cream and simmer for another 10 minutes. Drain the cooked pappardelle and toss with the sauce. Stir in half of the Parmesan cheese and serve with the remaining cheese. Garnish with fresh basil.
