Ingredients for 1 servings:

  • 2 bell peppers, red
  • 2 garlic cloves
  • 1 red chili pepper(s)
  • 1 star anise
  • 1 tbsp tomato paste
  • 1 dash of lemon juice
  • 2 tbsp agave syrup
  • Salt

Wash, deseed, and roughly chop the bell peppers, and place them in a saucepan. Finely chop the garlic. Deseed and chop the chili pepper. Add both to the bell peppers. Add the star anise and agave syrup. Cover everything with water and bring to a boil, then cover and simmer over low heat for 1 hour. Remove the star anise and remove the bell peppers, garlic, and chili pepper from the pan with a slotted spoon and place them in a blender. Add the tomato paste and puree. Add a little stock until it reaches a ketchup-like consistency; the ketchup will thicken slightly when cold. Season the ketchup with a dash of lemon juice and salt. This is a low-sugar yet delicious ketchup, with the sweetness coming from the bell peppers.
