Ingredients for 1 servings:
- 1 bell pepper(s)
- 2 eggs
- ½ tsp paprika powder
- ½ tsp salt
- some pepper
- 3 tbsp Parmesan

First, dice the bell peppers. Any other vegetables can be used instead of bell peppers, of course. Place the bell peppers in a small baking dish, sprinkle with the spices, and mix. Bake at 150 degrees Celsius (convection oven) for about 20 minutes, until the vegetables appear cooked through. Immediately add the eggs, mix everything briefly, and sprinkle with Parmesan cheese. Return the dish to the oven and cook for another 20 minutes. Keep an eye on it so it doesn’t dry out. When the surface is beautifully golden yellow and crispy, the dish is ready. A green salad goes very well with it.
