Ingredients for 2 servings:
- 110 g rice
- 3 bell peppers, colored
- 500 ml vegetable stock
- 3 small spring onions
- 1 clove(s) garlic
- a few stalks of basil
- some chives
- some paprika powder
- some pepper
- possibly salt
- 1 tsp oil

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cook the rice in the vegetable broth. Meanwhile, dice the bell peppers, finely slice the spring onions, and thinly slice the garlic, then sauté. Season with salt, pepper, and paprika. Drain the cooked rice well and toss with the vegetables and finely chopped herbs. Serve the bell pepper rice and garnish with herbs.
